Winemaking

Produced predominantly from Grenache and Macabeo vines. The grapes are harvested by hand and transported from the vineyard to the winery in 15-kg boxes to minimise their oxidation. Once there, the grapes undergo a gentle pressing. The impurities are removed through a simple decantation process and the fermentation is carried out in concrete vats where, once it has vinified, the wine rests for 9 months.
