L’Oratori

Winemaking

The Oratory hill is one of the iconic estates of the winery, where the Grenache variety predominates. The grapes for this wine are harvested by hand and transported from the vineyard to the winery in 15-kg boxes, thereby minimising their oxidation.

The fermentation is carried out at the winery in vats at a controlled temperature. Once vinified, L’Oratori rests for 12 months in old concrete vats which are stored underground. It is during this time that the wine gains in balance and complexity, thanks to the micro-oxygenation made possible by the concrete vats.
