Winemaking
The grapes for this wine are selected from among the oldest vineyards of the land, from between 40 and 80 years old, during the same harvest time.
The grapes are harvested by hand and packed into 15-kg boxes. The fermentation is carried out at the winery in vats at a controlled temperature. Once vinified, the wine rests for 12 months in oak casks.
