Winemaking
The grapes for this wine come from century-old vineyards planted in a granite-based soil. There are different types of Carignan, Grenache and Piquepoul varieties interspersed on the same land, just as they used to be planted historically. The blending of each vintage is the one provided by each vineyard. The harvest is done by hand at the same time and manually packed into 15-kg boxes.
All the grape varieties are vinified together and the wine is aged with its lees for 12 months in 225-litre French oak casks. During this time, the bâtonnage stirring technique is carried out regularly.
